Beef Wellington - Xmas Eve
Locally reared 6 oz fillet of beef wellington with a mushroom and onion duxcelle, chicken liver pate, wrapped and decorated in puff pastry.
Comes with a rich port wine cream sauce.
Cooking Note: I strongly recommend buying a temperature probe so you can regulate how you like your beef cooked! Also use egg yolk only as egg wash to get the best golden bake!
Note on my supplier: I use Mr Pursers fantastic beef fillet from Great Canfield, it is very local to Lilly’s Kitchen and completely delicious.
